CELEBRATE HONEY WITH DELICIOUS RECIPES FROM
Ontario's Beekeepers

Honey Dip
3/4 cup mayonnaise or yogurt
1/4 cup liquid honey
Blend yogurt and honey.
Serve with apple wedges or over your favourite fruit salad.
Yogurt Shake
1 can (16 oz.) of desired canned fruit in juice 
3 crushed Ice cubes
1 cup low-fat plain yogurt 
2 Tbls. honey
1 banana
dash of nutmeg, if desired
Combine fruit with juice, yogurt, banana, ice and honey in blender or food processor: 
Blend until smooth. 
Pour shake into chilled glasses. 
Sprinkle with nutmeg and serve immediately.
Chocolate Applesauce Cake

1/2 cup shortening 
1/2 cup sugar
1 tsp vanilla 
1/2 cup honey
3 eggs 
1/2 cup applesauce
1/4 cup honey 
1 pkg (6 ounces) semi-sweet chocolate
2 3/4 cup cake flour 
1tsp salt
3 tsp baking powder 
1/2 tsp soda
1/2 tsp cinnamon 
1/4 tsp nutmeg
 

1. Cream shortening with sugar until light and fluffy. Continue creaming while adding honey in a fine stream. Add vanilla. Add eggs one at a time, beating after each addition.
2. In a Saucepan, combine applesauce, 1/4c honey and chocolate pieces. Heat slowly until chocolate is melted and mixture is smooth. Cool.
3. Sift dry ingredients together.
4. Add alternately to creamed mixture with chocolate-applesauce mixture. Beat after each addition until smooth. Spoon into two 9 inch greased pans.

Heat oven to 350 degrees (moderate). Bake 25-30 minutes or until cake tests done in center. Cool on racks for 5 min. Remove from pans. Finish cooling on racks before frosting as desired.

HONEY glazed Salmon

1 onion diced
1 cup dry wine
1 cup tomato juice
1/2 cup of ketchup
1/2 cup of honey
1 tbs. Worcestershire sauce
1/2 tsp. chopped garlic
1/2 tsp. chili powder
4 Salmon steaks

Combine onion and wine in large pan. Bring to a boil. Add remaining ingredients (except fish). Mix it all very well. Cook it all for about 10 minutes. Put glaze in blender or food processor. Mixture must be smooth. Grill salmon over medium hot coals, basting with sauce. Salmon is done when it flakes easily.
